Make this delicious poppy seed cake in your KitchenAid stand mixer!

  Ingredients – Cake

  • 3 Extra Large Eggs
  • 375 ml Castor Sugar ( 1.5 Cups)
  • 125 ml Cooking Oil ( ½ Cup)
  • 250ml Plain Yoghurt ( 1 Cup)
  • 125 ml Poppy Seeds ( ½ cup)
  • 250 ml Coconut ( 1 cup)
  • 250 ml Self Raising Flour ( 1 cup)
  • Teaspoon salt
 KitchenAid stand mixer - Raspberry Ice
  Method – Cake

  • Turn oven on at 180 Degrees Celsius. Spray 2 baking pans ( round or square) with non-stick spray
  • Beat the eggs and add the Castor Sugar Slowly and mix well
  • Add the oil and Yoghurt and mix well
  • Add the Poppy Seeds, Coconut, Self-Raising Flour and the salt and mix well till all is mixed
  • Put in 2 baking pans and bake for 30 to 35 minutes ( just watch it )
  • Take out and let cool
 KitchenAid stand mixer - Crystal Blue  Ingredients for White Chocolate Icing
(can also use standard Cream Cheese Icing for cake if White Chocolate one is to sweet)

  • 200 grams of White Chocolate
  • 125 ml Icing Sugar ( ½ cup)
  • 60ml Milk ( ¼ cup)
  • 2 Teaspoons of Butter
  • 5ml Vanilla
  • Extra poppy Seeds
  Method – Icing

  • Melt the Butter and the White Chocolate over boiling water in a bowl
  • Add the Icing sugar and Milk and stir until smooth
  • Add a few extra Poppy seeds.
When the cake has completely cooled, ice the cake with the white chocolate icing, in-between the cakes and on top. I usually pour it over the cake on top and spread it. You can also add fresh berries when you serve it.   yummyyellow
